Pour the 300 g mango purée, 60 ml lime juice and 300 ml cold water into a jug until the mixture looks bright yellow-orange and smells fresh and citrusy.
Tip · Mixing the liquids first helps you judge the balance before adding mint, which can quickly become too strong. - 02
Tear in 10 g mint leaves and stir for 30-60 seconds until the drink smells cool and minty, with the leaves just lightly bruised.
Tip · Tearing mint gently releases flavour without making it taste grassy, which can happen if you chop or crush it too hard. - 03
Taste the refresher and add 50-100 ml more cold water if it feels thick; stir until it looks smooth, pourable and evenly coloured.
